Fall flavors ~ Roasted Squash Medley



Recently I've been paging through some of my older Taste of Home magazines to get some recipe ideas to make use of our garden produce. We have more winter squash and zucchini than anything else.

One of the recipes I ran across using winter squash was this delicious one:
Roasted Squash Medley.

We had tasted this recipe a couple of years ago at the home of friends in Nevada. It had such fabulous flavor that I definitely wanted that recipe. At the time, I didn't know that I had the recipe already at home in a Taste of Home magazine!

I made this delicious veggie side dish again for guests this past winter, and was reminded of it again this past week as I bumped into it in an old magazine. So, I promptly made it again. Squash, potatoes, onions, sweet peppers, garlic, olive oil -- absolutely scrumptious!

The recipe states that it serves 6, but this is 2 large pans of veggies. I made half the recipe for 4 of us, and that was plenty. So don't feel you have to make the entire recipe; it can easily be halved and works out just fine. Enjoy this wonderful taste of autumn!

  1. We have lots of squash too. What I have a picture of on the blog is about 1/2 of it. We will put most of this in the freezer a little at a time, but it's nice to find recipes like this. I'll just sub out the potato for some turnip and carrots which I have. I think I'll try this tonight.

    We got a bread machine (well, you know where it came from), and I cleaned it up and tried it for the first time last night. It sure takes a long time. I ended up stopping the cycle, taking the dough out and baking it in the oven. I can see that if I am using this I'll need to start it in the morning before work and just let it run it's cycle.

    I was sure surprised on Saturday to find 4 more rather large zuchinni in the garden. I thought they were done. We had treated them rather roughly when we pulled up the winter squash vines. Our very strange weather has tricked them into another season of squash. The bees are still busy down there too.

    Saw the pictures of poor Julia. I pray this other dentist is able to access the damage and help her out and that there won't be any ongoing issues.

    Hope you enjoyed this dish as much as we do! The turnip and carrots would fit in just fine. The flavor is out of this world, in my opinion.

    Yes, a regular bread machine cycle takes a good 3 hours, but I tend to only use it for bread when I have to be out of the house for a morning, afternoon, or day. While you're at church is a good time -- you come home to fresh bread! But in general, I use the machine mostly for making dough, which only takes an hour and a half and produces such good dough. I use this for pizza dough, focaccia bread, rolls, or just any bread I want to bake in loaf pans.

    We have lots of zucchini still coming along too...
