Cheeseburger Macaroni

I have very little extra time today, but wanted to quickly post this recipe link: Cheeseburger Macaroni.  I tried this recipe, from Kevin & Amanda, on Monday and we really enjoyed it.

I've made cheeseburger macaroni recipes before, but this is the best of the lot.  The homemade cheese sauce that's stirred in, and the use of taco seasoning and diced tomatoes with chilies, sets it apart from any others I've tried.  I thought mine turned out just a tad too salty (I was using homemade taco seasoning) or too spicy, I couldn't decide which, but my hubby and granddaughters insisted it was just right.

Hope you enjoy this recipe if you try it.  I would say that almost any child would enjoy this dish, but adults will enjoy it too.  It is true comfort food!

  4. I hope you do try it, Nikki. I think your family would probably love it. I will say you might need to triple the recipe. I doubled it because that just didn't sound like enough macaroni for five of us. But I think it would have been; we had lots left over. So I think tripling might do it for you. One thought: when I multiply recipes of this type, I DON'T multiply the meat. I just don't think we need that much meat, especially when a recipe contains cheese as well. And with the cost of ground beef these days, we can't afford to use a lot of it.

    Do you have a Hannaford supermarket near you at all? If so, you should know that they will grind any boneless beef roast into hamburger for you. (They won't do it using older, reduced meat though.) Often they have roasts on sale for $2.50 per pound or less, and this, when ground, turns out to be about 90% lean or leaner. You just pick out the roast and ask the meat man to grind it. He will happily do so for no extra charge. Just a thought that might save you a little money here and there!
