Menu Plan Monday for October 1


Another Monday! And the start of a new month, too! Some of my menus are held over from last week, but I have some new ones too.

MONDAY: Mrs. Wojcik’s Potato Soup, Whole Wheat Bread

TUESDAY: Stuffed Shells, Salad, Breadsticks

WEDNESDAY: Boston Subs, Three-Bean Salad

THURSDAY: Macaroni & Cheese, Green Beans, Apple Salad

FRIDAY: Southwestern Frittata, Breakfast Potatoes, Winter Blend Vegetables

SATURDAY: Mexican Chicken Sandwiches, Southwestern Rice Bake

SUNDAY: (potluck at church) Roasted Vegetable Chili, Green Apple Spinach Salad, Almond Apple Cheesecake

    We had your Spicy Lemon Chicken tonight and it was DELICIOUS! It is a very healthy dish and quite easy to assemble. I just wanted you to know:).
    I have a question that you may be able to answer. I am on the prowl for a good Cider Donut recipe. I've yet to find one and I wondered if I could add cider to the donut recipe I already use instead of the milk. I wasn't sure if the milk was necessary or if a substitution would work such as cider. Do you think that it would change the donuts much?

    I am going to do a bit of a search through some of my cookbooks and recipe clippings and see what I come up with. I know that somewhere (probably in my "recipes to try" binder) I have an article from an old Yankee magazine about a lady who was a famous donut maker in Maine. I think there may have been a cider donut in there...

    I am just not sure about substituting cider for milk. I wouldn't hesitate substituting cider for *buttermilk* as they are both acidic, but am just not sure about regular milk. I would think also with the cider you might want to adjust the spices somewhat -- probably more cinnamon, less nutmeg, maybe add some cloves.

    I wanted to thank you for sending the recipe and tips to me. I'll let you know when I make the cider donut recipe.
    I appreciate the time that you put in as you looked through your recipes and surfed the web in search of a good recipe.
    I would have responded via email but I can't seem to send out messages for some reason. My husband is good at pinpointing and correcting computer issues so I hope to have email access once again.
