Favorite Ingredients Friday for July 6


Here's a recipe for one of my favorite chicken dishes. The toasted walnuts are the secret to the fabulous taste!

WALNUT CHICKEN

3 tsp. cornstarch, divided
3 Tblsp. soy sauce, divided
1 pound boneless skinless chicken breast, cut into 1/4” strips
1 Tblsp. water
1 1/2 tsp. vinegar
1 1/2 tsp. sugar
Dash of hot pepper sauce
1/2 cup walnut halves
3 Tblsp. vegetable oil
1 medium green pepper, cut in 1” pieces
1/2 tsp. ground ginger

In bowl combine 1 tsp. cornstarch and 1 Tblsp. soy sauce until smooth;
add chicken and toss to coat. Cover and refrigerate 30 minutes.
Meanwhile, in a bowl combine next four ingredients with remaining
cornstarch and soy sauce; set aside.

In skillet, sauté walnuts in oil until toasted. Remove with a slotted
spoon and set aside. In same skillet and same oil, stir-fry chicken
until juices run clear. Add green pepper and ginger to skillet; cook
and stir 3 minutes or until pepper is crisp-tender. Stir reserved
cornstarch mixture and add to skillet. Bring to boil; cook and stir 2
minutes or until thick and bubbly. Stir in walnuts.

Serve with or alongside rice -- either plain white rice or fried rice. I like to serve it with a tossed green salad with mandarin oranges added.

Makes 4 servings.

This wonderful recipe is from a Quick Cooking magazine of some years ago. We love it!

  6. WOW! I noticed in your profile that you love tent camping. We are JUST starting out tent camping (went just a few weeks ago) and LOVE it! Do you have any good recipes to share for tent camping?? All my "recipes" are from girl scout days where you had a BIG open fire. Now with the drought, you are not allowed to have open fires. Most people bring their own propane stoves OR they have that tiny little grill. And even then, sometimes you are not allowed to use those. HELP?!?!? GREAT site BTW!

    We have a Coleman camp stove. It uses Coleman fuel. Our stove is a 3-burner one with a griddle that fits over 2 burners when needed. This has worked wonderfully for us and has met all of our camp cooking needs for over 25 years. We bought our stove at a consignment shop for, I believe, $15!

    It's interesting, but I've been thinking for a few days about doing a post concerning camp cooking. I don't think we're going to get to go camping at all this summer; maybe in the fall. But someone on another site was looking for camping recipes, so that got me thinking about doing a post. So I will do just that, as soon as I can find some writing time.

    Here's one thought, however: tacos. We always do one taco meal when we go camping. I just buy the taco dinner that includes the shells, sauce, everything but the meat and the toppings (lettuce, tomato, etc.). It's all in one box except the hamburger, so it's easy to pack. Don't forget that even simple meals taste better outdoors. Another easy thing I've done is canned alphabet vegetable soup served with grilled cheese sandwiches.

    Must sign off, but will do that post soon. In the meantime, check into a Coleman stove .. maybe you'll find a deal like we did!
