Menu Plan Monday for July 2


Wow, these Mondays come around fast! Here's my plan for the week, maybe subject to a bit of change due to a busy week and some vacation days as well as appointments and a holiday.

MONDAY: Italian Submarine Sandwich, Tomato Soup

TUESDAY: probably eating out after some appointments

WEDNESDAY: (July 4th) Hamburgers, Hot Dogs, Potato Salad, Baked Beans

THURSDAY: One-Pan Potatoes & Pepper Steak, Bean Blend, Coleslaw

FRIDAY: Crab Melt Loaf, Pasta Salad, Baby Carrots

SATURDAY: Garlic Lime Chicken, Sweet Potato Fries, Coleslaw

SUNDAY: Italian Sausage & Vegetables; Ranch French Bread

    Looks so yummy! If that's the same garlic lime chicken that is in the Saving Dinner cookbook by Leanne Ely...well, it is sooooo yummy!!

    So nice to see you all around my kitchen table!

    Sheryl and Susan -- No, this isn't the garlic lime chicken from Saving Dinner, though I do have that book and I agree -- that recipe is great! This one uses the bone-in chicken breasts and is marinated overnight, then baked in the oven. The marinade contains coriander in addition to the garlic and lime flavors, and it gives the chicken such a wonderful taste. The only downside is that you have to remember to marinate the chicken the night before.
