Menu Plan Monday for March 26
Monday again! I have a few repeats this week because of meals that didn't get used last week. Here's my menu:
MONDAY: Three-Cheese Enchiladas, 3-Bean Salad
TUESDAY: Garlic Lime Chicken, Potato Salad, Herbed Carrots/Green Beans
WEDNESDAY: Italian Sausage Subs, Potato Salad
THURSDAY: Almond Chicken Stir-fry, Bow Tie Pasta, Asparagus Stir-fry Vegetables
FRIDAY: Spicy Beans & Rice, Cornbread, Cole Slaw
SATURDAY: New England Fish Bake, Winter Blend Vegetables
SUNDAY: Beef Stew, Whole Wheat Bread or Rolls, Dessert (potluck dinner at church; haven't decided on a dessert recipe yet)
It's official, I can't read anymore menus until I've eaten breakfast. This menu looks scrumptious!

Sure, Arlene, I will share the Garlic Lime Chicken recipe. I have tried a couple variations of this, but the one I like best uses the bone-in chicken breasts. I'll try and post it later this week.
