Menu Plan Monday for May 14
It's Monday again! I have a lot of repeat menus this week. Last week was unseasonably hot and so I changed my menus around. Here's my plan for this week (always subject to change):
MONDAY: Cannellini Comfort Soup, Cornbread
TUESDAY: Lemon-Dill Chicken Popover, Cranberry Jello Salad, Winter Squash
WEDNESDAY: Aunt Ned's Hamburgers, Potato Salad
THURSDAY: Fish Fillets with Broccoli, Mashed Potatoes, Candied Carrots
FRIDAY: Overnight Spinach Manicotti, Salad, French Bread -- also, at lunchtime on Friday I'm getting together with some other ladies for a picnic -- I'm going to bring cucumber sandwiches, potato salad, and either cupcakes or bars for that.
SATURDAY: Vegetarian Curry, Couscous, Coleslaw
SUNDAY: Changeling Chicken, Rice, Salad

I love the menu--what is Changeling Chicken?

ReplyDeleteChangeling Chicken is a new recipe I'm trying. I originally got it from a set of crockpot recipes which people sent in to FlyLady a few years back. The lady who sent it in said that she called it that because it was so flexible and the ingredients could vary. It has coconut milk in it among other things -- chicken, of course, veggies like baby carrots and peas. Served over rice. Sounds good to me. I try to do a crockpot recipe every Sunday, if not more often. I just love having that meal ready and waiting when we come in the door from church!

BTW you say you like doing crockpot once a week, I have a thursday feature called Slow Cooking Thursdays and a lot of ladies come by and share crockpot recipes, you might enjoy that :)
