Stuffed Squash for 2 -- a delicious main dish for fall

Here is a delicious main dish recipe that I tried for the first time last week: Stuffed Squash for Two. I used buttercup squash because we prefer it to acorn, and substituted rice for the croutons to make it wheat-free. Because I eliminated the croutons, I had to add more seasonings, but this is a delicious main dish for fall!
I live in scenic northern New England with my handsome husband. We're empty-nesters with a bunch of adorable grandchildren. We love (tent) camping and traveling, but don't get away as often as we'd like to.
