My dad's blueberry bushes are producing some yummy fruit right now and so I just had to make some muffins. Thankfully the weather was cool enough for baking. I made a batch of regular blueberry muffins for everyone else and then a batch of gluten free ones for myself. I keep them in a covered plastic box in the freezer and heat them up one by one as needed.
This is the recipe I used:
Gluten Free Fruit Muffins. It is the tried and true recipe from King Arthur that I love. I skip the streusel topping as it is just not necessary. So for these I added 1 and 1/2 cups blueberries and then, on a whim, I added about 3/4 cup of flaked coconut. The muffins turned out perfectly! Perhaps your family would enjoy them, too.
Thank you for including the link to the gluten-free muffins. My husband prefers gluten-free and I don't have much experience baking this way. The coconut sounds yummy with the blueberries!
ReplyDeleteSeems this is a good year for blueberries everywhere Mrs T. My hubs loves a parfait made of vanilla Greek yogurt, granola and blueberries. I exchange the blueberries for strawberries and bananas. Oh my...now I am hungry!! ;)

ReplyDeleteGina-- the King Arthur website has great info on baking gluten free. It might be a good place for you to start in learning more about it. They have lots of recipes and I highly recommend them.
Arlene -- those parfait ideas are making me hungry! Too bad I am out of granola, but I just might have the vanilla Greek yogurt (love that stuff!) with blueberries anyway! Thanks for sharing!
