Alfresco Bean Salad -- cool salad for a summer potluck!

I have made this recipe twice now and we really enjoy it:  Alfresco Bean Salad.  The first time I took it to a potluck at church, people commented on how good it was.  It went over so well that time that I took it to our annual 4th of July picnic (held this year on the first) and people enjoyed it there too.

I do make just a couple of changes in the recipe.  I leave out the jalapeno and the onions.  I just don't enjoy raw onion in things, and it's been my experience that many other people avoid them too.  Also, I substituted a can of great northern beans, drained and rinsed, for the garbanzos because I just prefer them.  This time I used the white whole kernel corn and, although it wasn't as colorful, it was delicious! 

As you can see, this is a pretty adaptable recipe and a very healthy one.  It could even be a main course if served with whole grain cornbread or rolls alongside.
