California Quiche

Here's a simple crustless quiche recipe I tried a few weeks ago:  California Quiche.  It's made with California blend frozen vegetables -- a medley cauliflower, broccoli and carrots -- and I suppose that's why it's called California Quiche.  The vegetables in this blend tend to be in large chunks, so I did chop them a bit after thawing.  The recipe calls for Havarti cheese in addition to cream cheese.  I used Cheddar instead of Havarti since that is what I had on hand.  This is a very simple and delicious recipe and I recommend making 2 quiches while you are at it.  It's great left over.  Enjoy!

    Hope you do enjoy this recipe if you try it. It seems as if it would be very adaptable as one could use different cheeses and veggies, and even add chopped chicken or ham or crumbled bacon. The cream cheese pieces in it (I use the lower fat Neufchatel) are a nice flavor surprise.
