The muffin cups seemed a little easier to eat, and a little fancier, for a ladies' brunch, but this hearty egg bake in a 13x9 pan looks perfect for Christmas breakfast. We will enjoy it with our neighbor Walter's sourdough rye bread, cranberry coffeecake (leftover from the brunch; it's been in the freezer), and clementines.
Just got in from delivering a couple of cookie trays (I walked, so as to get some walking in; my walking partner was too busy to go today, but the weather is perfect). Now I'm off to prepare a few last kitchen gifts and wrap some gifts.

Have a wonderful Christmas, Mrs. T! On Christmas morning, we deliver Christmas cards to everyone in our 55+ mobile@ home park - 330 handwritten cards with a bible verse on each one. We've been doing that for 5 years now. Spreading Jesus in each card! God bless you all!

DeleteI have been feeling very relaxed and mellow today; although I have accomplished quite a bit, it has felt more like puttering. My stress level has increased a bit now, but going to bed nice and early should take care of that.
Yes, it was a beautiful day for walking here until midafternoon when it started snowing. It didn't amount to a lot, but was a slippery snow. Mr. T counted 3 cars off the road during his 20-minute commute home.

DeleteWe had a casserole for Christmas morning. grits, scrambled eggs, sausage and cheese. I was so in hopes you will tell us what yours was made with.
ReplyDeleteLatane, the link will take you to the recipe on the Taste of Home site. The basic ingredients for the casserole are hash browns, sausage, cheese, eggs, evaporated milk and cream of mushroom soup. It turned out very well!
