Menu Plan Monday for January 29


Monday again! It's chilly here in New England, so I've planned lots of warming meals. (There are also a couple of repeats since some meals ended up not getting used last week.)

Here's my plan for this week:

MONDAY: Brown Rice Curry with Vegetables and Shrimp; Coleslaw

TUESDAY: Potato Cheese Soup, Multigrain Ciabatta

WEDNESDAY: Pizza Frittata, Breakfast Potatoes, Baby Carrots

THURSDAY: Macaroni & Cheese, Country Carrots, Coleslaw, Baked Cinnamon Pudding

FRIDAY: Broccoli Sausage Simmer, Rotini, Italian Bread

SATURDAY: Favorite Lentil Soup, Cornbread

SUNDAY: (potluck at church) Crockpot Chicken Enchiladas, Marinated Carrot Salad, Chocolate Cake with Fudge Sauce

    I LOVE your meal plan....very simple and homey comfort type foods. Would love to hear more about your broccoli and sausage simmer.....what is that?

    It is good to have all of you here at my kitchen table today!

    I will post the broccoli sausage simmer later this week -- maybe tomorrow if there's time. It is a Quick Cooking recipe, if I remember right. The Baked Cinnamon Pudding is from a Gooseberry Patch cookbook -- I think it is Magic of Christmas. The pudding is similar to a hot fudge pudding, only with a cinnamon-brown sugar flavor. I have not tried it before, but it sounds wonderful. I will post the recipe after I try it.
